ACCIDENTAL HEALTHY GLUTEN FREE BANANA BREAD say whuuuut?! Ever heard of such a thing ? well now you have! So here’s the deal, my sister was in town this weekend, I had some rather ripe bananas that were begging to be used so we decided to make some banana bread! We searched through a handful of recipes but somehow none of them were to our liking. Each one had an ingredient we didn’t want to use or one that we didn’t have soooo we came up with the idea ? to make our own on the fly and it came out ??

Ingredients we used:
〰️ 4 ripe bananas (3 for batter, 1 for topping)
〰️ 2 tbsp coconut oil
〰️ 1 and 1/4 cup of oats (I used gluten free ones from @traderjoes )
〰️ 1/2 cup of almond flour
〰️ 2 eggs
〰️ 2 taps baking powder
〰️ 1/2 tsp cinnamon
〰️ 1/2 cup chocolate chips (half were 72% dark chocolate chips and the remaining half were 100% cacao chips)
〰️ Dash of salt

Directions for baking:
? Preheat oven to 350°F. Grease loaf pan.
? In a large bowl, mash three bananas. Add in the two eggs and combine.
? Then, in no particular order, add in the oats, almond flour, baking powder, cinnamon, and chocolate chips. Combine these ingredients together and let them sit.
? In the meantime, slice the 4th banana into dime sized circles. Heat up a sauté (with Rayy ?) pan to medium heat. Add the coconut oil to the pan. Cook slices on each side for a couple of minutes until they’re caramelized. Remove from heat.
? Pour batter into greased loaf pan then place it into the oven and bake for 30-35 minutes.
? Let the banana bread cool (or don’t ?), slice a piece and enjoy with a drizzle of honey! ?
