APPLE & CINNAMON BREAKFAST MUFFINS ?



APPLE & CINNAMON BREAKFAST MUFFINS ?

I N G R E D I E N T S
– 1 1/2 cups of flour
– 1 tbsp baking powder
– 1 tbsp cinnamon
– 1 cup grated apple
– 1/2 cup of apple (cut into small chunks)
– 1 tbsp coconut oil (melted)
– 2 tbsp sugar free syrup (I used maple from @bulk)
– 2 eggs
– 2 tbsp coconut sugar
– 1 tsp vanilla extract

1️⃣ combine all the dry ingredients into one large bowl.
2️⃣ combine all the wet ingredients into another smaller bowl.
3️⃣ mix the grated apple and chunks into the dry mixture.
4️⃣ fold them wet into the dry to make a thick batter.
5️⃣ evenly spoon the batter into 12 muffin cases.
6️⃣ bake at 180 degrees for 8-12 mins
7️⃣ leave to cool and serve with Greek yoghurt and honey ?
