CRISPY CHICKEN LAKSA ???

Made this for hubby’s work lunch
Easily fit this into my plan below
This is how we do our laksa ?each to there own
.
.
80-100 gram’s chicken thing or 130 gram’s of chicken breast
.
150 gram’s veg I used the below
Bok choy
Capsicum
Corn kettle’s
.
1/3 cup of tin tomatoes
.
60 gram’s vermicelli noodle’s
.
Sauce
20 gram’s onion and 1 glove garlic
1 tspn oil
1 1/2 tspn laksa paste
Tble spn curry powder
1 tspn fish sauce
1 tblspn soya sauce
1 tspn of sugar free stevia I use the liquid
Salt and pepper
1/4 light coconut cream
1/4 -1/3 water
.
.
Cook chicken in the air fryer until golden and crispy or oven
.
In a pan fry onion and garlic in hot oil
Add laksa and curry paste (fry off for a little)
Add tin tomatoes to this mixture
Then add the rest of your ingredients from the sauce list above.
Add coconut cream
Add water till it’s a silky consistency
Stir in salt and pepper until it taste just right!
.
Steam or stir fry veg to your liking.
.
Add vermicelli noodle’s to a bowl submerge on boiling water until noodle’s are cooked through.
.
Once chicken is cooked place noodle’s in a serving bowl aswell as veg and chicken on top.
Submerge your dish in the sauce and ENJOY!
