Crispy Tofu w/ Creamy Indian Flavored Pesto
(Vegan • Gluten Free • Nut Free)

Wow so I’ve been experimenting with my pesto (you know I’m obsessed) & I came across something similar using Indian flavors called Saag Paneer & had to make my own version with what I had available of course!

This beautiful creamy green sauce is vegan, nut free, oil free, just 4 ingredients & some spices to make this creamy dreamy goodness!

1. Press tofu – Coat in mixture of nutritional yeast, lemon juice, cumin, salt, pepper
2. Bake 375° for 25-30 min (flip)

Creamy Indian Flavor Sauce:
1. Sauté onion & garlic until browned
2. Add spices: coriander, cumin, ginger powder, turmeric, salt, pepper
3. Add spinach & dash of water
4. Cover & wilt spinach
5. Add to food processor with large handful of parsley & blend into sauce
6. Stir in 1 large tbsp of plain yogurt
7. Coat your tofu in creamy sauce!

Cabbage – sautéed in white vinegar, cumin, salt, cover until soft & wilted
