#dinner tonight was a homemade Thai red curry with prawns!
The recipe:
For the paste:
– 1/4tsp coriander
-1tsp cumin
– 1 red pepper
– 3 small chillies
– 4g lemongrass
– 1tsp tumeric
– 2 garlic cloves
– 1 medium lime
– 6 spring onions (green only diced)
– 2tsp coconut sugar
– 1tbsp turmeric
I blended this all- then jarred for later!
I then heated my pan with some oil on a low heat, added around 1/4 tub of the paste to the pan and heated with 4 tbsp of coconut cream (milk).
I added my veg and prawns to the mix along with some dried chilli and herbs and turned the heat up a bit until simmering.
Then continued to add coconut milk until I reached the desired consistency and.. voilá!!
