**HEALTHY BEEF CHILI**

One of my favorite fall foods is a good beef chili. The best thing is there’s tons of different ways to make it your own.
-2 lbs of 93/7 ground beef
-1 tablespoon olive oil
-2 cans dark kidney beans
-1 red bell pepper (5 ounces)
-1/2 large sweet onion (3 ounces)
-1 can Rotel diced tomatoes & green chilies (fire roasted)
-1 can petite diced tomatoes
-1 cup beef broth
-1 packet of McCormick chili seasoning
-2 teaspoons chili powder
•Take a large stock pot and add the olive oil. Then add your chopped onion and bell pepper to the pot.
•After the veggies are about half way cooked, add the beef and cook thoroughly.
•Once the beef is browned add all the rest of your ingredients. Make sure not to drain the kidney beans, add the juices and all!
•Let your chili simmer for about 30-45 minutes. Then enjoy??
*We topped ours with fat free cheddar cheese and light sour cream. Macros below do not include the toppings.
