Healthy Zucchini Bread
3 cup rolled oats
1-1 ½ tsp cinnamon
½ tsp nutmeg (optional)
½ tsp salt
½ tsp baking soda
½ tsp baking powder
1 cup dark chocolate chips (optional)
2 cups finely grated zucchini (about 2 medium zucchini)
⅓ cup sugar-free syrup (can also use maple)
½ cup unsweetened almond milk
2 eggs
1.) Preheat oven to 350 degrees
2.) Add oats to a blender and blend into fine out flour and place in a large mixing bowl
3.) In the bowl with oat flour add cinnamon, nutmeg, cinnamon, salt, baking powder, and soda to the dry ingredients
4.) In another bowl add eggs, syrup, and almond milk and whisk
5.) Add wet ingredients into dry ingredients and mix together until well combined
6.) Fold in chocolate chips
7.) Spray a bread pan with nonstick cooking spray and fill with batter leave (leave ½ inch to an inch for rising)
Can also use mini loaf pans, cooking times will differ.
8.) Bake for 40-45 minutes or until cooked through (toothpick test)
