Hiya, the weekend is upon us and I’ve got a simple recipe for nibbles to get you through.
A no-bake granola bar!

For those nature valley fans, when it pinches, you can switch to this. It is super easy to make and super healthy too.
3 cups quick cook oats
1 cup almonds, roughly chopped/ shredded Coconuts/Fried groundnuts
Pinch of salt
1/3 cup coconut oil, melted
1/3 cup Huney
1/4 cup soft light-brown sugar
1/4 tsp almond extract or preferred flavor.
First off, line a large enough baking tray with baking paper, making sure to cover the sides.
Mix all the ingredients in a large bowl and pour onto the tray, flattening it as much as possible. Now cover the top with another sheet of baking paper and use a tray slightly smaller to flatten and compact it. If you have the skill, you can use a large equal width rolling pin to flatten it as well.
Place in the fridge for 2 hours and then pop it out. The honey and coconut oil would have hardened to soft candy texture.
Lift the sheet with the bars off the tray and cut it out to bite sized slices. Put them in a box and store in the fridge, that is if you are true fit fam and don’t gobble it all up!
