I was in the mood for some pumpkin tea cake yesterday and had the time so I whipped up a loaf! ??‍?

Recipe:

1/2 applesauce
3/4c brown sugar truvia
2 eggs
1tsp baking soda
1tsp baking powder
1tsp salt
1tsp pumpkin spice blend
2 1/2c gluten free flour
1c pumpkin

Preheat oven to 350°
Sift together flour, salt, spice mix, and leavening agents.
In a separate bowl add the truvia, eggs, pumpkin, and applesauce. Whisk together until mixture is combined—will have a thick consistency.
Add in dry ingredients in two rounds. Folding together with a spatula until just combined as you don’t want to over-mix.

Bake 350° in 9×5 loaf pan that has been sprayed with oil for 60-75 minutes depending upon your oven.
Check after 60 minutes. If too much browning, cover with aluminum foil.
When testing, a paring knife should come out clean.
Yield: 1 loaf, 10 slices
