InstantPot Vegan palak paneer

Ingredients:
“Paneer”:
* 1 14-oz pressed firm tofu
* 3 Tbsp nutritional yeast
* Juice of 1 lemon
* 1/4 tsp cayenne pepper
* 1/2 tsp salt
* 2 Tbsp water
* 1/4tsp garam masala
.
Palak:
* 32 ounces frozen spinach
* 1 Tbsp avocado oil
* 1 medium yellow onion, sliced
* 4 cloves garlic, minced
* 1 Tbsp minced ginger
* 1 tsp salt
* 1/2 Tbsp garam masala
* 1/2 tsp ground cumin
* 1 tsp turmeric
* 1/2-1 tsp chili powder
* Juice of 1 lime
* 1/2 cup full fat coconut milk
* handful chopped cilantro or green onion, for topping

Instructions:
Marinate pressed tofu in paneer ingredients and bake for 10 mins at 350.
Sauté pepper, onion, garlic, ginger, and spices for 8-10 minutes on the sauté setting of the @instantpotofficial @instanthomeofficial . Add lime juice and spinach and stir well. Add tofu and coconut milk and cook on slow cooker setting for 30 minutes or pressure cooker for 10.
Serve with rice or cauliflower rice
