It’s been a minute since I’ve got creative in the kitchen! But it might be time to get back to my love for baking and share the little tricks and treats I make to help curve the sweet ?! It’s that time of year for all pumpkin everything so let’s start with a #fbf! Pumpkin Spice Protein Muffins that are low fat and low/moderate carb too! The texture and taste is unbeatable! Especially with how few ingredients you need and how fast they are to whip up! Just a couple minutes of prep time!

-1 scoop @1stphorm pumpkin spice latte protein powder – (you can use a different protein, but I found this one works best so far!)
-1/2t baking powder
-1T stevia (truvia, I prefer)
-2.5 @bobsredmill coconut flour
-2T pumpkin purée (canned)
-2T 0% fage Greek yogurt
– 3T almond or cashew milk
– cinnamon/nutmeg to taste. I used 1/2t cinnamon and 1/8t nutmeg m
-1/2T vanilla extract.
-optional but recommended: @bobsredmill 1/8t xanthan gum ?
Mix all items together in a bowl for about 45 seconds to make it thick. Add to a muffin pan and bake at 350 for 25-27 min. (For even more moisture, or to increase fats, top with 1T but butter! ?
Recipe makes 2 large Muffins! Total macros for 2: 287 calories, 31p/6f/31c with 12 fiber (net carbs: 19g) ?
