it’s #muffinmonday & no better way to celebrate than with these COCONUT BLUEBERRY MUFFINS‼️?? adapted my fudgy coconut flour muffins to make a light & flavorful recipe that’s the perfect on-the-go breakfast. They’re gluten & dairy free, plus they’re packed with healthy fats to keep you fuller longer! I made these as a lil mid-morning snack before some football tailgates a few weeks ago and they were a hit ?
Coconut Blueberry Muffin #dEATS ??
3/4 cup coconut flour
1/3 cup runny almond butter
1/2 cup granulated sugar (I used brown)
2 1/2 tbs coconut oil, melted
1/2 cup almond milk
1 large tbs vanilla
2 tsp cinnamon
1/2 tsp baking powder
1/3 cup coconut flakes/shreds
1/2 cup blueberries
—Combine almond butter, sugar, eggs, oil, vanilla, and milk in a bowl using a hand mixer.
—Add in sifted dry ingredients and mix again.
—Fold in blueberries and coconut flakes.
—Spoon batter into a lined muffin tray and bake @ 350 degrees for 15-16 minutes.
