Lebanese Spinach Pie

One of my favorite pies , loved getting from Lebanese bakery . But sometimes there was barely any spinach in them. So I decided to make my own.
– Rhodes frozen dinner roll dough , 16 balls, thawed
– 16 oz. baby spinach,washed & completely dry
-salt & cayenne pepper flakes to taste
– 3 tbsp olive oil or replace oil with veggie broth
-3 small onions,diced fine
– 2 1/2 tbsp sumac
– 1/4 tsp citric acid

Cook onions in nonstick pan with the oil OR broth , just until tender. Remove from heat, let cool completely. Then add everything else, adjust seasonings to taste. Roll out each little ball of dough, stuff with the spinach filling & pinch edges together very well, in any shape you desire. Place on a parchment paper lined cookie sheet. Bake at 350’ until golden brown. Soooo so yummy ? . These freeze very nicely too !
