Light-ish zuppa toscana! Made this last year and ate on it for days so I knew I had to bring it back for soup szn ?? i think the purple potatoes are my fav ☺️ I work this weekend so I was able to get a day off today to even out my work days and man, it sure is a nice little break! I got lots of tasks done today including making this soup, and I hope you guys enjoy it! It makes a ton!! And as always, ingredients can be switched up based on your liking ☺️

Ingredients:
* 12 c chicken broth
* 1 13.5 oz can of coconut milk
* 1 lb Italian sausage, casing off, split into pieces
* 1.5 lb little colorful potatoes
* Italian seasonin
* Crushed red pepper
* Salt and pepper
* Minced garlic
* 2 onions, chopped
* A large bag of kale
* Olive oil or cooking fat of your choice
Directions:
1. Add olive oil to a pot on medium heat, add in your onions and garlic, cook for 5 minutes
2. Add your Italian sausage on medium heat, cook until cooked all the way through
3. Add salt, pepper, Italian seasoning, crushed red pepper to taste
4. Add your chicken broth and potatoes, bring to a boil, cover with lid and let simmer for 10-20 minutes or until the potatoes are tender to fork
5. Last step – Coconut milk and kale! I love the way the soup tastes with the kale so I loaded up, I did about 4 handfuls! When it gets cooked down you can fit even more kale in there if you’d like.
6. Let the kale soften a bit (5-10 min), and enjoy! Super tasty, lmk if you try it!!
