mini oat flour pumpkin pie
this recipe is pretty similar to my oat flour mango tart, check it out if you haven’t already <3
Halloween or fall is not really a big deal where I’m from, but I thought i would hop on the pumpkin trend as everyone was doing it ?
dEATs-
Serves 2-3
vegan, rsf
Crust-
Mix together 1/2 c oat flour w 1/4 c coconut oil, 2 tbsp PB, and 1/4 c whole flour till a dough is formed, bake in a tart mould for 20 mins at 180 c. Freeze for 10 mins after baking.
Filling-
In a pan add, 1/2 c pumpkin purée, 1/3 c maple syrup, cinnamon, cardamom, ginger, 1/3 c almond milk mix together and add 1/4 c super fine oat flour and mix on low, pour this mixture into the crust and refrigerate for 3-4 hrs.
(I also added 1 tbsp @urbanplatter.in coconut sugar that has all the spices )
royal icing is made from aspartame but you can also use icing sugar if necessary.
