✨NUT FREE GRANOLA FOR BACK-TO- SCHOOLl✨
Home-made granola is on high rotation in my kitchen. We use it all the time as morning cereal with yoghurt, almond milk and berries; to layer into chia seed parfaits; as a topping for acai or smoothie bowls or just smoothies; and simply eaten by the handful as a quick, nutritious snack.
In my Easy Wholefoods Lunch Boxes I have a nut-free, low-sugar granola recipe which is a perfect addition for kids lunch boxes as a little trail mix type snack or packed with a side tup of yoghurt and berries.
This recipe uses apricots or dates which is mixed through the granola prior to popping it into the oven, but you could also stir through some sultanas or cranberries once it is out of the oven and has cooled, instead.
CRUNCHY SEED GRANOLA
Ingredients
1 cup whole rolled oats
2 cups coconut flakes/chips
1 cup mixed seeds – like pepitas, sunflower seeds, sesame seeds and chia seeds
½ cup sulphur-free apricots or dates, chopped or you could throw in some sultanas.
1 teaspoon cinnamon
Pinch nutmeg
Pinch of cardamom powder (optional)
1/2 teaspoon ground ginger powder
1 teaspoon vanilla extract
1 tablespoon coconut oil, melted
2 tablespoons brown rice
