This recipe is just for the crepes which are super easy and lovely on their own, and you can compliment by adding some nice sides in the smart divider for more variety ;)⁠

▪️Non stick cooking spray, as needed⁠
▪️1 large egg⁠
▪️1/4 cup (60ml) milk of choice⁠
▪️1/4 cup (60ml) water⁠
▪️1 tbsp melted butter or coconut oil, slightly cooled⁠
▪️1/2 cup (62g) plain/all-purpose flour⁠
▪️2 large bananas⁠
▪️4 tbsp nut butter or allergy friendly alternative, or more to taste⁠

1️⃣In a mixing bowl, whisk together the eggs, milk, water and melted butter (or coconut oil) until smooth. Add the flour to the wet mixture and beat until smooth⁠
2️⃣Heat a non-stick frying pan over medium-high heat and spray with the non-stick cooking spray. Pour 1/4 cup dollops of batter into the pan and tilt the pan with a circular motion so that the batter coats the surface evenly.⁠
3️⃣Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn (or flip if your brave) and cook the other side. Remove the pancake from the pan and allow to cool slightly. Repeat with remaining batter.⁠
4️⃣Using a butter knife, spread 2 tbsp of the nut butter (or more if needed) evenly over each crepe. Place a banana on the bottom third of each crepe; being careful not to tear the crepe, roll tightly. Slice crosswise into 8 pieces.
