Quick, quick… she ended up being faster than me. Look at that little hand on the background. I make this loaf for so many years now. It used to be my husband’s favourite on the beginning of our relationship. These days the kids also love it. The great thing about it is that it’s packed with veggies and nobody notices. CARROT ZUCCHINI, APPLE & WALNUT LOAF. Ingredients: 2 cups self-raising flour, 1 tsp bicarb soda, 1 tsp ground cinnamon, 1 cup sugar ( I use rapadura sugar, sometimes, xylitol, honey or a mixture of maple syrup and sugar of choice) 3/4 cup chopped walnuts, 3 eggs, 1/2 cup oil (you can chose your favourite) 1 cup grated carrot, 1 cup grated zucchini (squeeze to remove juice), 1/2 grated Granny Smith apple (squeeze to remove juice) Method: 1. Preheat oven at 180 2. Mix all dry ingredients in a bowl 3. Combine eggs and oil – beat them slightly 4. Add veggies and apple to egg mixture. Mix well until combined 5. Add dry mixture 6. Spoon mixture into a loaf pan 7. Bake for 50 minutes or until a skewer comes out clean 8. Cool in pan for 10 minutes then turn into a wire rack
