Roast Tandoori Chicken drumsticks

Quick, easy and home-cooked with a lot of vegetables. Homemade chilli paste tastes better. This tandoori sauce is a must-so delicious. Traditional tandoori chicken is cooked in “tandoor – a cylindrical clay/metal oven”.

Ingredients:
4 chicken drumsticks, skin on
1 Tbsp chopped ginger
1/2 brown onion, diced?
3 cloves garlic, minced?
1 tsp chopped turmeric
4 red chillies, chopped ?
1 tsp ground coriander
1 tsp ground cumin
1 tsp salt
2 + 1 Tbsp Greek yoghurt
2 + 1 Tbsp cooking oil
1 Tbsp fresh lemon juice ?

Method:
1. Prepare the chilli paste: Blend chillies, ginger, onion, garlic, turmeric together to form thick paste. Mix in salt, ground coriander and cumin.
2. For the tandoori chicken drumsticks: Add 1 tsp of chilli paste and 1 tsp of yoghurt together. Brush the mixture to chicken drumsticks. Drizzle 1 Tbsp of cooking oil to chicken drumsticks. Roast for 30 minutes in 180C easy cooker or 45 minutes in 180C oven.
3. For the tandoori sauce: Fry the rest of the chilli paste in 2 tablespoons oil, until fragrant. Add 2 tablespoons yoghurt and lemon juice. Garnish with fresh coriander.
4. Serve the tandoori chicken drumsticks with tandoori sauce. Complement with lots of veggies (Stir fry beans with cauliflower and fresh purple cabbage in the photo).
