Single serve gluten- and dairy- freee choco chip pumpkin cookieee ? single serve cookies are my go-to when I want a baked dessert without all the work, time, mess, etc. it takes to make a whole batch, and this take on my original choco chip one is perfect for fall!!
1. in a bowl, mix together the following:
• 2 tbsp oat flour
• 1 tbs rolled oats
• 1 tbs brown sugar
• 1 1/2 tsp pumpkin purée
• 1 1/2 tsp coconut oil
• a dash of pumpkin pie spice, cinnamon, & sea salt
• a splash of vanilla
• a splash of milk (add a bit at a time til the batter thickens)
2. shape into cookie, top with df dark choco chips, and a sprinkle of flaky sea salt
3. microwave for 1-2 minutes (optional: finish it up in the air fryer at 350° for a couple mins to crisp up the outside)
