Spicing things up this Saturday thanks to these ☝️ incredible Spiced Chicken & Black Bean Quesadillas by @hans.hungry ? Made with our very own Red Pepper & Tomato Salsa ?️? And not forgetting a dollop of guac ? Check out the recipe below!
Ingredients (serves 2)
2 chicken breasts, sliced into strips
200g black beans (1/2 a tin)
½ red pepper, sliced
½ red onion sliced
5-6 mushrooms, sliced
½ pack fajita spice mix
40g cheddar cheese, grated

Holy Moly Guacamole
½ lime juice
A handful of fresh coriander, finely chopped
2 tortilla wraps
1.To a large bowl, add the chopped peppers, mushrooms and onion and a good drizzle of olive oil- stir so that all the veg is coated in the oil. Then, add the chicken strips and fajita seasoning and stir. For best results, leave to marinate in the fridge for a few hours.
2.Bring a large pan to a medium heat and pour in the chicken and veg mix. Fry for 7-8 minutes or until the veg has softened and the chicken is fully cooked through. Add the lime juice and stir in the black beans-reduce the heat to low.
3. Bring another pan (preferably non-stick) to a medium-low heat. Add one of the tortillas and fry for a couple of minutes until started to crisp.
4.Next, spoon the chicken & bean mix onto the tortilla, evenly spreading the mixture over the entire tortilla. Sprinkle over the grated cheese and place the second tortilla on top.
5.Allow to cook for another minute, then, using a plate, flip the tortilla onto the other side. Carefully slide the tortilla back into the pan and continue to cook so that the other wrap crisps up and the cheese has melted.
6.Remove from the heat and slide the tortilla onto a large plate. Slice into 6 triangles.
Serve with guacamole, sweet salsa and an extra squeeze of zesty lime.
