Pumpkin Spice Protein Pancakes

Ingredients:
Yield 8 pancakes (2 servings)

•¾ Cup oat flour
•1 scoop @Leanfitbrand chocolate whey
•1 scoop @Leanfitbrand chocolate plant based
•½ tsp pumpkin pie spice
•1 Tbsp coconut sugar
•1 tsp baking powder
•1 egg
•1 tsp vanilla extract
•1/3 cup pure pumpkin puree
•¾ cup ++ almond milk

Method:
Combine all dry ingredients in bowl, whisk wet ingredients into dry starting with ¾ cup of milk and adding more as needed to get pancake consistency (should be thick and not too runny).  Portion about ¼ cup of batter onto preheated frying pan and cook 1-2 minutes per side. 

For the pumpkin Greek yogurt fluff:
•¾ cup plain Greek yogurt
•½ scoop @Leanfitbrand vanilla whey
•¼ tsp pumpkin pie spice
•¼ cup pure pumpkin puree

Mix all these ingredients until smooth. Top pancakes.
