The Best Ever Healthy Pumpkin Bread ? It’s Truly Like P



The best ever healthy pumpkin bread ? it’s truly like pumpkin pie bread because the texture is soooo good. It also uses a whole can of pumpkin so you don’t have that random amount saved in your fridge haha. Gluten free / dairy free / free of refined sugar! It’s a winner ?make it this weekend and try not to fall in my footsteps of eating the whole loaf in 3 days ??‍♀️ Xo #thewellnutt ⁣

Here’s how ya do it:⁣
1 15 oz can pumpkin purée (not pumpkin pie mix)⁣
1/4 cup coconut oil, melted (make sure it’s not hot when you add it to the bowl) ⁣
2 pastured eggs ⁣
1/2 cup pure maple syrup ⁣
1 tbsp vanilla ⁣
1 1/2 cups oat flour (mine were not leveled perfectly, more of a heaping cup and a half) ⁣
1 tsp cinnamon ⁣
1/4 tsp nutmeg ⁣
1/4 tsp salt⁣
1 tsp baking soda (make sure yours isn’t expired! Mine was unknowingly & had to get more)⁣
Powdered sugar for topping ⁣

Preheat oven to 350 and grease a loaf pan with coconut oil. Mix eggs, maple syrup, coconut oil and vanilla in a mixing bowl. Stir in pumpkin purée. In a separate bowl, mix together dry ingredients. Mix the dry ingredients into the wet until combined. Add mix to bread pan and bake for 40-50 min. Sweet spot for me was 45 minutes – the middle takes a little longer to get done so ensure it’s cooked through! Let bread cool completely before diving in!! Texture might not be right if you try to cut while it’s still hot 🙂
