1 cup canned pumpkin purée ⠀
3/4 cup vegetable oil ⠀
1/2 cup coconut or brown sugar ⠀
1/2 cup maple syrup⠀
2 tsp vanilla ⠀
2 tsp pumpkin pie spice (I used @spicelyorganics) ⠀
2 cups AP flour⠀
1 tbsp + 1/2 tsp baking powder⠀
1 tsp baking soda⠀
1 tsp salt ⠀
1/4 cup plant milk ⠀
1/2 cup pumpkin seeds⠀

Mix together pumpkin, oil, maple syrup, sugar. Then add vanilla and pumpkin pie spice. Add dry ingredients and stir until just combined. Pour in the milk and mix until incorporated. Fold in your pumpkin seeds. ⠀

Place batter into a prepared 9×5 loaf pan. This is optional but you can sprinkle the top with oats and more pumpkin seeds. Bake at 350 for 40-50 mins. Mine took 47! Enjoy ?
