Vegan Double Chocolate Scones!!?
These are still one of my favorite scones that I’ve made, they have that nice scone taste and texture while being made with easy n good for ya ingredients (and filled with chocolate chips!) Scones are also a really nice treat to have with coffee!☕️
Here is the recipe, it makes 8 scones…
•2 3/4 cup all purpose flour
•1/2 cup coconut sugar (or regular sugar will work too)
•1/4 cup cacao powder
•1/2 teaspoon salt
•2 teaspoons baking powder
?whisk the dry ingredients together, then add in…
•1/4 cup almond butter
•1/4 cup coconut oil
•3/4 cup cold nondairy milk (I used oat)
•vegan chocolate chips
?using your hands, incorporate the dough until it just holds together when pressed (it’s okay if it’s a tad crumbly, it’s important to try and touch the dough the least that you can to get that scone texture! But if needed add another tablespoon or two of milk)
?place the dough onto a parchment lined baking tray and use your hands to press it into a circle that is a bit taller than an inch. Slice into 8 scones and spread them apart on the baking tray. Place the tray in the freezer for around 30 or so minutes (just not less than 30 minutes) then preheat the oven to 350 degrees Fahrenheit and bake for 20-25 minutes (until slightly browned and crisp to the touch, they firm up more as they cool)
?once they cool, drizzle over some chocolate icing (this is what I used! Just mix 1 cup powdered sugar, 1 tablespoon cacao powder, and water until it’s your desired consistency) or melted chocolate works too. Let the drizzle set and then enjoy!
I prefer to store these in a sealed container on the counter and eat them within a few days or you can store them in the fridge or freezer if you want them to last longer.
