? Vegan no-bake pecan slice ?

??‍?❌No oil, no butter, no flour, no eggs, no bake! Sound too easy?! ?

?10 mins to prepare, and you have yourself a wholesome, delicious slice which stores in the freezer. ?

?Cut into small (big) bite sized squares, and you have quick, easy-access snacks. ?

A couple of squares ?? are also a great post-training ?‍♀️ refuelling snack option, with a ratio 3:1 carbs to protein, required to replenish glycogen stores.

?SO MUCH TASTE!?

Crust ingredients: ?

*1 cup almonds
*1.5 cups oats
*5 tablespoons maple syrup
*2 teaspoons cinnamon
*1/4 teaspoon salt

Filling ingredients:

*1.5 cups dates
*1 teaspoon vanilla extract/small scrape vanilla beans
*1/4 cup water
*1/4 teaspoon salt

Topping:

*1 cup chopped pecans

Method:

? Pulse the crust ingredients just until almonds are broken/crushed
?Pat down into a lined 20cm x 20cm brownie/baking tray
?Blend/mix in food processor the filling ingredients, scraping down the sides and mixing until smooth consistency
?Spread carefully onto crust layer. Can use back of spoon or butter knife dipped in water to smooth
?Press down chopped pecans into date layer
?Transfer to freezer for 45 mins.
