These zucchini, mint, & feta fritters are so delicious – easy to make and a great way to get a serve of veg into breakfast ?
To make 10ish little fritts:
2 medium courgettes, grated
3 eggs
1 handful each of mint & italian parsley, chopped
2 spring onions, chopped
~50g feta, crumbled
3 Tbsp flour (I used gluten free)
Sprinks of chilli flakes, garlic powder
Salt & pepper
Place grated zucchini in a drive and squeeze out as much moisture as possible – salting beforehand helps.
Combine with the remaining ingredients in a large bowl.
Heat a large frying pan over medium heat.
Add small amount of oil and drop spoonfuls of batter – make em as big or small as you like.
Cook until golden around the edges, about 2 mins or so. Flip and cook the other side.
And we’re done! Serve with whatever you like – pictured here with Serrano ham and smashed avocado ? ? Also amazing with poached eggs and hollandaise
